Christine Ferber, the queen of jam, and her entire team prepare these wonderful jams in Niedermorschwihr, a small village nestled in the heart of the Alsatian vineyards. No more than 4 kilograms of fruit are processed at a time in copper cauldrons to produce jams that have already won over the greatest chefs.
